wow viewers hadn't realised i had turned the stove off...been a while so i will finish off 2025 with a simple but delicious recipe for a hot summer day.
this follows the no churn vietnamese coffee ice-cream, same idea, same ingredients minus a few variations. no churn ice-cream has been rather popular on insta. but hey you don't need a degree in food chemistry to create your own, you can basically make whatever you like. i pinched this recipe from insta but added my own personal touch. this will be the easiest ice-cream you will ever make. the only hard part is not eating the whole batch in one go. i have to confess i am rather fond of ice-cream myself and this pistachio if you are a fan of this delectable nut is no less delish. i will be eating this tonight as i celebrate the new year dog sitting, watching an endless stream of movies in my pj's without a care in the world and if i eat the whole tub so be it, next year i won't be so greedy, lol.
pistachio no churn ice-cream
1 x 600ml thickened cream
1 can of condensed milk
1 cup of pistachios
2 teaspoons of vanilla
pistachio butter
method
blitz pistachios in a food processor then add condensed milk and whizz until just combined
beat cream and vanilla until thick peaks
fold in pistachio/condensed milk concoction
pour half into a tub ( makes about 2 litres) and add some dollops of pistachio butter and then cover with remaining pistachio cream, add some chopped pistachio and freeze for 4-6 hours or overnight and you are done. how easy is that viewers?
